Shredding - Baking

This morning was one of those days that I couldn't sleep in. I chatted till almost midnight then finished up a couple more blogs and went to bed at 1:15. I woke up at 8:30 from a nightmare and couldn't get back to sleep so I got up. Jim was already up watching the 24 hour race at Daytona. Today was the beginning of another racing season.

I decided I didn't want to read blogs, so I started shredding past bills and paperwork. I can't believe how much I had and almost all of it had social security numbers or credit card numbers. I'm glad to have another box cleared out. I still want to scan some medical records that I had copied from the military. Another long term project. At least the photos are all done.

I decided to make a blueberry cobbler this afternoon. I don't like the kitchen very well, so it's something that's not done very often. I found a great recipe on the internet and I was in and out of the kitchen in half hour. That's my goal for any cooking or baking. Now we have a great dessert for the later hours in the evening.

I also came up with an idea of something really good and fast to make. In fact I'm hoping to remember it for the potluck dinners I hear so much about at the campgrounds.

Chicken/Beef Tortillas
Chicken cut up and browned
Add 1 can diced rotel tomatoes
heat 1 can refried beans
warm tortillas, spread a bit of sour cream on each tortilla
spread on the beans, top with the chicken, and add cheddar cheese

It was so fast and filling.

I did read a few blogs, played some computer games, and will get on chat later tonight. Tomorrow starts another week of work and I have to work 30 hours this week.

Great recipe, Dee. What did you use for yours in place of tomatoes?

For those that can't use tomatoes, use a cream sauce, mushroom soup.

Hi Dee... Looks like a simple and yummy recipe... I know you can't wait for the retirement and to hit the road... We love our life... Have been doing it for 5 years now and can't see an end date... Have a great Monday

Dee, Thanks for the recipe. I am collecting them for a book I am working on. May I add yours? I collect recipes from where ever we travel. I have been working in the book for 3 years. Hope to finish it this summer while we are home.
