Jiggs Dinner

(Avon Park, FL) Hi 75 Lo 56 -- We thought we'd have storms and rain this morning. We brought in the awning and folded up the chairs. We waited all day and all the rain went either north or south of us. We had about 15 minutes of rain and wind this afternoon, but no severe storms. That's ok, we don't like severe storms in an RV.

We stayed inside and did computer work all day. Jim worked on organizing his iTunes music library, and I played games. Later in the afternoon we went to Elaine and Rick's for dinner. Elaine made what she called a Jiggs dinner. According to Wikipedia:


Jiggs dinner is a traditional meal commonly prepared and eaten on Sundays in many regions around the province of Newfoundland and Labrador, Canada. Named after a comic strip character, the dish is sometimes spelled Jigs dinner or Jigg's dinner.The meal typically consists of a combination of pickled salt beef (or salt riblets), boiled potatoes, carrot, cabbage, turnip, turnip greens, bread pudding, dressing, pease pudding, and a cooked turkey, chicken or beef roast. Condiments sometimes include mustard pickles, pickled beets, cranberry sauce and butter. 


Elaine made it with ham, potatoes, rutabagas, carrots, onion and cabbage cooked in Orange Crush Soda. It was delicious! They also invited their neighbors Ken and Debbie.

After dessert of coconut cake we stayed for a couple of hours visiting and laughing then went back to our home for the evening. Thank you Elaine and Rick for a wonderful evening and a great meal!

you are most welcome...there were carrots & onions in it also and everything was cooked in Orange Crush Soda :)..
