Back to Grandma's RV Camping in KY

(Shephardsville, KY) Hi 72 Lo 62 -- We are excited about this trip to Kentucky.  There's so much to do in the Louisville area. We did our final walk-around before leaving and, oops!... we forgot to lower the rooftop TV antenna. So it was back inside, move the slide out, and crank it down. Thank goodness we BOTH do a walk-around. Four eyes are better than two. :) Another little glitch was a missing caribiner clip we had on the end of our breakaway cable. We sometimes leave the cable hanging over our kingpin, and it looks like this time someone needed that clip worse than us. :( After finding an alternate way of connecting our breakaway cable onto the hitch, we finally got on the road at 11:00.

We had a great trip, very little traffic and great weather. We arrived at Grandma's RV Camping in Shepherdsville (about 20 miles south of Louisville) at 2:00 and was met by Eddie, one of the park managers. The first thing he asked us was if we had reservations. Thank goodness we did, because the RV park is full. We got set up, and when I opened the refrigerator a liquid started dripping out onto the floor. It turns out that a jar of sliced jalapenos tipped over and the lid came off, pouring the juice all over everything, including two plastic organizing trays. Yuck! So lesson learned for new full timers... be sure lids are on tight. :)

We were here this past September but had to leave after only two nights to go to Raleigh to help mom. It's good to have a chance to come back again. We have several places we want to go and people to see while we're here, so we won't be sitting in our recliners with our laptops as much the next two weeks. They do have great wi-fi here in the park, so it's great to be able to play Gardens of Time and have it load fast. I'll play in the evenings when we're home.

Yesterday I mentioned the Cowboy Casserole I made for dinner. It's from the RV-Dreams cookbook we got at the rally in 2008. A couple of people left a comment asking for the recipe. I made a few changes to it because it was a little too sweet for our taste, but here it is:

Cowboy Casserole
1 lb ground beef
2 garlic cloves
Onion (to taste)
1 can white beans (any kind, great northern is great)
1 can pork of beans
(I sometimes substitute other beans of any kind)
2 tsp  Worcestershire sauce

Brown the beef, put in the onion and garlic. Drain excess fat and add the beans. Red and green bell pepper can also be added. Season with salt and pepper. Simmer for 10 minutes. Serve with rice or alone. I usually make potatoes. This casserole can be made with anything, add tomatoes or cheese on top, or sour cream.

Oh glad you saw the antenna! Yes, both doing a walkaround is great, plus with your driving another vehicle behind, you can see those things too as you follow. Good for you. Bummer on the theft of the pin! argghhhhh

Like your recipe for your casserole. Kinda like my calico beans (I add bacon)
