Chicken and Dumplings

(Joliet, IL) Hi 72 Lo 47 -- It's been great sleeping weather the last few nights. It just can't get any better as far as the weather. Nice, 70-degree, sunny days.

We've been here a week, so it was time to dump the tanks. It took us one hour and 10 min from start to finish to get the RV ready for the move, hitch up, tow over to the dump station, and come back and get re-set up. It's kind of a pain, but necessary when you're in place for two weeks or more and don't have a sewer hookup.

Our son Rick loves the way I make chicken and dumplings, and he always wants me to make them for him when we visit. So around 4:00 we left for his place, and stopped at a grocery store on the way to pick up the necessary supplies. We got to his house before he and Laura got home from work, which allowed me time to make everything and have it ready when they got home. We had a nice meal with Rick, Laura, step-grandson Joey and step-granddaugher Ellice (the recent high school graduate). Everyone seemed to enjoy the meal, which made me feel good. We spent the rest of the evening talking and visiting, then left for home around 10. A nice, enjoyable evening with the family.

We think the Carolina Clan would love some Chicken and Dumplings!!! What would it take to make enough for 36 (so far) people... just kidding;o)))

I suggest you get one of those small low profile potable "blue caddies". They can be towed or pulled up to the dump station and you wouldn't have to break camp. I turned down an excellent "host" position in FL (St. Andrews State Park) for this winter season because it did not have a sewer connection. A follower to my Blog suggested the "blue Caddy". If you had thought of this option and just ruled it out as something you didn't desire to use, please disregard the suggestion.

Don't forget us when you swing West. Tawakoni State Park is right next door to us if you are looking for a place to light during the journey. We are not always in this area but maybe we will be??? What ever you do travel safe...

Wow I haven't heard of that dish in awhile! I think chicken and dumplings is pretty much a MidWest thing. Anyway, whenever we cross paths I would like to try your version of it, Dee...

Son Rick here. I confirm once again that the dumplings were perfect. I just finished eating dinner and my mouth is watering thinking about it again.
